At this time every year Harmons does Roasted Peppers.
You go inside the store and pick a case (or more) of Peppers. They have mild, medium and hot.
You pay for them at the register. This year they cost 26.99/case. Then you take them outside where they have the roasters. They put them in a bath and then into the big roaster, and roast them for you.
It if fun to watch. The peppers start to make a popping sound and the smell of the roasted peppers is delicious!.
When they are done roasting they put them in a big plastic bag and tie it so that the peppers can Sweat. I usually take mine home and let them sit for awhile. 1. I want them to cool enough that I can handle them 2. I want to let them sweat so that the skins are easy to take off. 3. I love the way my whole house smells like roasted peppers.
Then the work begins. All the peppers need to have the skins taken off and be seeded so I can place them in the freezer. 15 bags with about 15 peppers in each. It took me about 2 hours to get them done.
But it is worth the effort. These peppers are going to make some really yummy Chile Verde!!! Bon Apetite!
